What is considered a success?
How should a site be assessed to know whether it is successful as far as search engine rankings are concerned?
What is considered a good ranking?

A successful site is one that ranks high enough for its chosen search
terms that it gets sufficient visitors to achieve the objective that you
had in setting up the site in the first place.

I can basically echo this - the measurement of success is relative because each site has different goals set for it. A site is only successful once it has met those goals.

There are a couple tests you can do, such as:
1. checking a site's Alexa ranking
2. checking a site's Google page rank
3. checking a site's link popularity
4. search in google for keywords specific to that website, and see where it ranks for various keywords
Those checks will give you a good idea to how well a site is ranking in search engines.

I would like to inform you that any site becomes successful when it gets a customer visit on site and for the page ranking are increase as customer visit increase on the site.

I think a site is considered to be successful if it gains number of visitors.

I guess it depends on how the site owner measures success. If he's put thousands of dollars into the site's creation and getting his business up and running, then he probably wouldn't consider it a success if his "website visitor" numbers increased. He probably needs to see a real return on his investment before he calls it a success. O the answer to that question is "it depends".
However, to paraphrase the initial question, "how should a site be assessed to see if it's successful as far as search engine rankings are concerned"..... the HOW can be answered by doing a few quick tests mentioned above, like google page rank, alexa page rank, link popularity, and simply doing searches in search engines for your keywrds to see where you place. That will tell you how well you're ranking in search engines.

I would say a successful site gets lots of visitors in its targeted market, has decent search engine rankings, and has a professional easy to navigate layout.

Your website will be consider the successful site when you will have a high pagerank.
